Fried Tilapia & Solkadhi (coconut curry)

Ingredients:

Fried Fish:

4 Tilapia fish fillets

4 cloves garlic

1/8 inch ginger

4-5 red chillies

2 tsp turmeric powder

4 tbsp rice flour

2 tsp black pepper

cilantro leaves cut

1 lemon

Salt to taste

Solkadhi:

1 can coconut milk

2 cloves garlic

5-6 kokum

cilantro

2 tsp oil/ghee

1 tsp cumin seeds

pinch of asafoetida

Sugar to taste

Salt to taste

Method:

Fried Fish:

1. Crush garlic, ginger, red chillies together in a blender.

2. Wash fish pieces throughly. Marinade with the garlic, ginger, red chillies paste. Add turmeric powder, chilli powder, black pepper., cilantro leaves and lemon juice. Keep aside for couple hours.

3. Cover fish pieces with rice flour.

4. Grease pan with oil and turn heat to high.

5. When the pan is hot, stir fry fish pieces till they cook crisp (about 7-9 minutes)

6. Serve hot with Solkadhi and rice.

Solkadhi:

1. Soak Kokum in water for 4-5 hours.

2. Grind kokum and garlic together. Add mixture to coconut milk

3. Heat oil in a pan and add cumin seeds, asafoetida and cilantro leaves. Let cumin seeds sputter and then add it to the cocunut milk. Add salt to taste.

4. Solkadhi is ready.
