Stuffed Eggplant - IP version
So exciting - the small eggplant plant is bearing small eggplants. Making stuffed eggplants served with rotis or rice for the family! This is a traditional dish!
Ingredients:
8-9 small eggplants
4 tsp coconut powder
2 tsp peanut powder
1/2 tsp jaggery powder
bunch chopped cilantro
Salt to taste
2 tsp Cumin - cilantro powder Vegetable oil
2 tsp turmeric powder
0,5 mustard seeds
1 tsp Cumin seeds
4-5 curry leaves
4-5 garlic cloves chopped
pinch asafoetida
1 tsp tamarind paste
1 tsp Goda masala
Method:
​1. In a bowl, mix turmeric powder, cumin cilantro powder, cumin seeds, cilantro, peanut, coconut powder , jaggery powder and cilantro chopped.
2. Meanwhile, start IP on saute mode. Add 2 tsp oil.
3. In IP, add asafoetida, turmeric powder, cumin, mustard seeds, curry leaves, garlic cloves chopped. Add onion and saute for 5 minutes,
4. Meanwhile, Slit the eggplants and add the masala from 2 in eggplants..
5. In IP, add the eggplants and saute for 5 minutes.
6. Close IP lid on Sealing and turn on "Manual Pressure Mode"-"Low" for 4 minutes. Let natural release.
7. Add tamarind paste, goda masala and salt and saute
Let stand for 5 minutes.
Serve hot with rotis or rice!!
