Green papaya pancakes (flatbread)

We bought two green papaya from store hoping they will turn ripe and orange and we can eat the fruits. We waited 10-14 days and they still stay green! I came up with this dish for dinner and everyone loved it. Served with yogurt and red and green garlic chutneys on the side. A recipe for breakfast or supper which is very filing. Neti asks more the next day.

Ingredients:

2 cup grated green papaya

Mixed lentil flour

1/2 cup cilantro chopped (optional)

pinch asafoetida

2 tsp onion powder

2 tsp garlic powder

1 tbsp oil

1 tsp sesame seeds

1 tsp cumin seeds

2 tsp turmeric powder

1 tsp chilly powder

1 tsp cumin powder

1 tsp cilantro powder

Salt to taste

Method:

1. Remove the skin of green papayas and the seeds. Make big pieces.

2. Use a food processor to grate finely.

3. Mix all above ingredients in a bowl. No need to add water. Green papaya releases water.

4. Make batter bowls large enough to spread on pan.

5. Take oil in pan and turn on heat till pan is hot.

6. Spread batter on pan so that the pancake is thin,

7. Wait for 2 minutes till the sides start coming off.

8. Turn the crepe side using spatula and cook for another 1 min.

9. Serve hot with yogurt and red/green garlic chutney.
