Green Springs chutney & Red chilly coconut garlic chutney (Sandwich Chutney)

The garlic springs I planted in my kitchen garden a pot are now all grown and drying up due to excess heat. I read online that the springs grow even when you cut them!! So here I get the fresh greens from the backyard garden. This spicy, tangy sauce goes well with hot fritters or sandwiches or rice/flour crepes. The red chilly coconut garlic chutney can be served with wada pav.

Green Sandwich Chutney

Ingredients:

1 cup cilantro chopped

8-10 garlic greens

1/8 inch ginger

2 garlic cloves

2 tsp salt

sugar to taste

2 tsp lemon juice

4 green chilly

1/8 cup mint (optional)

Method:

1. Grind all ingredients together.

2. Add water if needed. The lemon juice keeps the green color of the chutney.

3. Add few mint leaves if you like the flavor

Red Sandwich Chutney

Ingredients:

1 cup coconut dry powder

8-10 garlic cloves

2 tbsp peanuts roasted

2 tbsp sesame seeds

2 tbsp cumin

2 tsp salt (To taste )

2 tsp Red color chilly powder (Kashmiri mirchi or paprika) (To taste)

Method:

1. Roast the ingredients as shown.

2. Grind all ingredients together.

3. Add salt and chilly powder.

Enjoy with fritters or sandwiches or rice/flour crepes.
