Alu wadi

Cooking feast for Ariv s Happy Birthday:) A traditional favorite snack served with variety of other traditional foods. Ariv as asked for his favorites- okra veggie, dahi wada, gulabjam, tamato saar. Making alu wadi, papdi, to be served on the side along with varan bhat, poli, cucumber raita, peanut chutney.


Ingredients:

5 large Alu leaves (1 roll)

10 tbsp chick pea flour

1 tbsp rice flour

1 tsp turmeric powder

1 tsp chilly powder

1 tbsp tamarind pulp

1 tbsp jaggery powder

Salt to taste

1 tbsp Ajwain powder

Method:

1. In a bowl, add the chick pea and rice flour. Add hot water to make smooth paste.

2. Add tamarind, jaggery and chilly , turmeric powder, salt and ajwain powder.

3. Wash the alu leaves thoroughly and pat dry.

4. Start with the largest leaf placing it upside down. Roll with a pin to make flat.

5. Spread the chickpea paste with hand or spoon.

6. Add next leaf and repeat the process.

7. Roll in a round roll.

8. In a pot, put 1 inch water and heat.

9. In a strainer, put the alu rolls and steam on medium heta for 15 mins. Let cool completely.

10. Make round pieces and fry in pan.

11. Garnish with sesame seeds and cilantro.
