Pesto Fish & roasted red pepper Sandwich
Ingredients:
For pesto sauce:
Bunch Basil leaves
1 clove garlic
2 tbsp olive oil
2 tbsp pine nuts/walnuts
4 tbsp parmesan cheese
Salt to taste
For Sandwich:
2 Red peppers
Provolone/American cheese slices
2 Tilapia fillets
Method:
Pesto sauce:
Blend all ingredients into a course paste. Pesto sauce is ready. Refrigerate.
Marinade fish with the pesto sauce and keep aside for an hour.
Sandwich:
1. Clean and cut red peppers in thin long slices
2. Sprinkle 2 tsp olive oil on the peppers and place them in oven at 360 F. Use another pan to bake fish simultaneously. Fish will be done in 20-25 minutes. Peppers could take longer. You can broil peppers for couple minutes.
4. Use slices of your favorite bread: Italian or whole wheat bread. I used the sandwich bread from Costco. Toast them if you like.
5. Arrange your sandwich with a slice of bread, cheese slice and baked fish. Spread pesto sauce on the other bread slice and add roasted red peppers on top of it.
6. Enjoy sandwich with soup of your choice.
