White bean Chicken Chili
I made White bean chicken chili for Chili Cookoff in office.
Ingredients:
2 cup White navy beans
1 cup White pinto beans
1 cup Chicken stock
1 pound Boneless chicken samll cut
2 onions cut in 4 pieces each
celery stems
Salt to taste
2 tbsp black pepper
2 tbsp crushed red pepper
2 tbsp Garam masala
4 cloves garlic crushed
Method:
1. Boil water in a stockpot and add some salt. And beans (navy and pinto) to it. Add celery. Add onions. Add black pepper powder.
2, Heat it for about 45-50 minutes.
3. Let stand for 10 minutes. Remove onions and blend.
4. Pour oil in a pan and add small cut chicken. Saute for 10-15 minutes.
5. Add black pepper, crushed red pepper, garam masala, garlic, salt and the beans to it. Add onion paste.
6. Heat for 25 minutes on low heat.
7. White bean chicken chili is ready. Sprinkle some cheddar cheese on it. Serve hot with corn bread.
