Idlis (Steamed rice & lentils)

My Mom makes the most awesome idlis. I never eaten Idlis as good as her anywhere. I learnt it from her couple years back when I watched her cook on my maternity leave.

Ingredients:

1 cup Urad dal

3 cup Basmati rice

2 tbsp fenugreek seeds

Salt to taste

Method:

1. Soak urad dal and rice separatedly in water for about 8 hours

2. Grind all ingredients (fine) separately in a grinder. Add little water every 5-10 minutes during grinding.

3. Mix them together and let stand for few hours. The batter ferments if kept overnight.

4. Grease idli pan with oil and add batter.

5. Steam idlis in a cooker (Add 1.5 inches water in the cooker and then put the idli pan in it and close cooker. Set heat on medium - high. It takes about 20 minutes to steam idlis.)

6. Serve hot with sambar and coconut chutney.
