Whole roasted veggie stuffed tandoori chicken
I always love to see the thanksgiving turkey in advertisements and in the grocery. Me and my family are not a fan of turkey but we love chicken. I was wanting to make whole roasted veggie stuffed chicken with the Indian spices for a long time now. Finally, made it for the first time in 2016! Every year from then on, made it either on thanksgiving or Christmas eve! Me and my husband have made this few times now.
I am sharing some pictures from the last thanksgiving 2020 ! My sister in law and family visited the week of Thanksgiving of 2020! Felt like this was the best chicken made after few attempts of trying. My favorite menu- Tandoori chicken stuffed with veggies, Indo Chinese veg hakka noodles, Tofu Eggplant, shezwan shrimp, mango milkshake, wine and yogurt pudding.
Ingredients :
1 whole chicken with skin(used organic)
For the marinade:
5-6 cloves garlic crushed
1/2 inch ginger crushed
Cilantro leaves
1.5 tbsp Mint powder
1.5 tbsp Cumin powder
1 tbsp Cilantro powder
2 tbsp Red Chilli powder
2 tbsp lemon juice
2 tbsp Salt
2 tbsp tandoori chicken masala (Shaan)
some 2-3 drops red food color (optional)
For stuffing
1 onion
1 carrot
4 cloves garlic
1/4 inch ginger
handful peas
1/2 red pepper
1/2 green pepper
bunch cauliflower
2 tbsp garam masala
1 lemon
Method:
1. Clean the chicken with the cavity and marinade overnight with above marinade. The masala to be applied inside the skin too. Put some slits on the chicken so that the masala soaks in.
2. Take 2 tbsp oil in pan and add cut garlic, ginger and onions to it. Stir fry for few minutes.
3. Add all other vegetables to it. Add cilantro leaves and garam masala. Add salt to taste. Let the stuffing cool.
4. Set stuffing to room temperature and stuff the chicken cavity.
5. Set oven to preheat at 375 F and bake in oven for 1 hour 40 minute. Check periodically.
6. After 45 minutes, you should flip it upside down. Add the oils and juices on the side on the chicken. This is very important to make it juicy.
7. Again after 45 minutes repeat this step.
8. At the end, Broil for 2-5 minutes.
9. Tandoori stuffed whole chicken is ready! Serve with mint chutney and homemade bread or Indo Chinese menu of choice!
