Malai Kulfi

First day of summer! Ariv ate popsicle in school and has been asking for popsicle at home too. Ariv's 4th birthday is a week from now. I thought of making malai kulfi for his birthday.

Ingredients:

Sweetened Condensed Milk – 14 oz

Evaporated Milk – 12 oz

Heavy Whipping Cream – 16 oz

Cool Whip Whipped Topping – 16 oz

Saffron (Kesar) – 1 pinch

Sugar – 1 tsp

Cashews, Pistachios, Almonds – 1/2 cup ground

Method:

1. In a large mixing bowl, combine Sweetened Condensed Milk, Evaporated Milk, Heavy Whipping Cream and Cool Whip. 2. Using an electric hand blender (or by hand), gently mix all ingredients together. 3. Grind Saffron, sugar and nuts. Add to above bowl. Mix well. 4. Pour mixture into small tequila plastic cups. Cover cups with foil and insert a wooden popsicle stick into the center. 5. Freeze Kulfi for at least 7 – 8 hours. 6. Serves about 28 cups.
