Shrimp & Veggie Pad Thai noodles


Ingredients:

1 packet pad thai noodles

1 red pepper

1 green pepper

1 yellow pepper

Bunch of green peas

bunch of mushrooms

1 small onion

1 spring onion

5-6 cloves garlic

1.5 tbsp curry powder

1.5 tbsp Red Chilli garlic siracha sauce

6 tbsp Oil

2 tbsp Salt

1 tsp Black pepper

1 tbsp Soya sauce

1 tbsp tomato sweet and sour ketchup

15-20 medium size shrimp

Method:

1. Boil 4 quarts of water with salt (1 tsp). Put noodles in for time specified on packet (12 minutes). Drain the hot water and put cold water on the noodles. Sprinkle some olive oil. Keep them aside.

2. Take 2 tbsp oil in pan and add cut garlic spring onions to it. Stir fry for few minutes. Add red pepper, green, yellow pepper, mushroom. Stir fry for 5 minutes. Keep aside. Stir fry shrimp and peas for 5 minutes. Keep bit crunch in the veggies. Keep aside.

3. Take 2 tbsp oil in pan and add some chili garlic sauce and soya sauce. Add noodles. Stir fry Add curry powder, black pepper, red chili powder, tomato ketchup. Toss.

4. Add all the veggies and shrimp and toss. Serve hot.
