Roasted cauliflower soup


Ingredients:

1 and 1/2 cauliflower florets

1 medium onion

5 cloves garlic

2 cups vegetable stock

2 -3 cups water depending on how you want the consistency

2 tbsp fresh ground pepper

Salt to taste

2 tbsp oil

2 tbsp Amul butter (optional) enhances taste

2 tsp spring onion leaves to garnish

Method:

1. Let cauliflower florets stand in salt water for 20 minutes

2. Remove from water and put in glass dish. Sprinkle olive oil on cauliflower florets. Broil in oven for about half hour till golden brown. Keep them aside.

3. Take 2 tbsp oil in pan and add cut garlic to it. Stir fry for few minutes. Add finely cut onion and saute till it turns transparent.

4. Grind together cauliflower florets and the above mixer in vitamix till it turns smooth. Add water while grinding.

5. Add the ground soup in pan again. Add the vegetable stock. Add pepper, salt, butter. Let boil for 10-15 minutes.

6. Serve hot. Garnish with spring onions.
