Tofu Lettuce wraps

My mom dad visiting us this week. All of us specially the kids are very excited to see Aji-Ajoba! Both my parents are vegetarians and have stopped eating carbs at night for dinner. I have been thinking about healthy low carb or carb free dishes to cook for dinner. I came up with this! My parents, husband and kids too loved this! Pair this up with roasted cauliflower soup and its so yum!

Ingredients:

1 packet extra firm tofu cut into small pieces

1 packet water chestnuts

4 cloves garlic

1/4 inch ginger

1 medium onion finely chopped

2 tbsp fresh ground pepper

Salt to taste

2 tbsp oil

2 tbsp peas

2 tbsp finely chopped carrots

2 tbsp spring onion leaves to garnish

2 tbsp soya sauce

2 tbsp stir fry sauce

1 tbsp tomato ketchup sauce

Siracha sauce to taste

10 Romaine lettuce shells

4 small Indian kurdai fried and cut into small pieces

Serves: 5

Method:

1. Take 2 tbsp oil in pan and add cut garlic, ginger, spring onions to it. Stir fry for few minutes. Add onions. Stir fry till transperent. Keep aside.

2. Take 2 tbsp oil in pan and stir fry tofu till golden brown Keep aside.

3. Take 1 tsp oil in pan and stir fry waterchestnuts. Repeat for peas and carrots. Keep bit crunch in the veggies.

4. Add all the above stir fried together in pan. Add ground pepper, salt, soya sauce, tomato ketchup, stir fry sauce. Add Siracha sauce by taste.

5. Serve tofu filling in lettuce wraps and garnished with kurdai.
