Pav Bhaji (Spicy vegetable curry)
My all time favorite. I am making this for Amit's birthday. Everyone makes this differently. I am sharing my own version of it.
Ingredients:
3 medium tomato
3 medium onion
1/4 inch ginger
5-6 cloves garlic
6 medium Potato
1 Cauliflower florets
1.5 cup peas
2 pabalno peppers finely chopped
1 jalapeno pepper (optional replacing 1 pablano pepper)
Salt to taste
1 packet amul butter
2 tsp cilantro leaves to garnish
1 tbsp cumin
pinch Asafoetida
pinch turmeric powder
2.5 tbsp Pav Bhaji Everest masala
0.5 tbsp Kolhapuri masala

Method:
1. In a pressure cooker, add the potato (remove skin), cauliflower florets and 2 cups water. Let cook till you hear 2-3 whistles and let stand
2. In a pan, add 4 tbsp Amul butter. After it melts, add cumin, asafoetida, turmeric powder. Let cumin seed sputter. Add finely chopped onion. Keep stirring till onion turns translucent
3. Meanwhile, use a blender to grind garlic, ginger and tomato. Add to the pan above. Let cook for another 10-12 minutes
4. Add finely chopped pablano peppers. You can add 1 jalapeno pepper if you like it hotter. Let cook for 2-4 minutes.
5. Add peas and let cook for 2 minutes.
6. Add the potatoes and cauliflower from pressure cooker to pan. Use a masher to mash veggies as finely as you can can. Add pav bhaji masala. Add Kolhapuri masala and salt. You can change the amount of masala depending how spicy you like your bhaji
7. Cut the pav horizontally and apply butter. You can make toast.
8. Serve the pav bhaji hot in serving bowl. Garnish with Amul butter and cilantro. Enjoy with Pav!
