Healthy green lentils
Spinach, kale, fenugreek, chards - I hated greens growing up, but now I love making, eating and feeding them. Even my little ones love it when served hot with hot rotis.
Ingredients:
3 bundles fenugreek leaves
7-8 cloves garlic
3/4 cup toor dal lentils
1 tbsp oil
1 tbsp cumin seeds
pinch Asofoeida
1/2 tbsp turmeric powder
1 tbsp chilly powder (optional - to taste)
1 tbsp cumin powder
1 tbsp coriander powder
1 tsp tamarind
Method:
1. Thoroughly wash and clean fenugreek leaves. Cut them finely and set aside.
2. Cook toor dal with 2 cups water in pressure cooker. 2 whistles and 20 mins on low.
3. Heat oil in a pot. When hot, add cumin seeds and asofoeida. Let sputter.
4.Add finely cut garlic. Stir till till turns golden.
5. Add fenugreek leaves and cook for 5 minutes
6. Add the toor dal and cook for 10 minutes. Add half cup water if needed.
Serve hot with rotis and ghee!
