Bitter gourd pickle

Bitter gourd pickle (called karlyache loncha in my mother tongue marathi). Bitter gourd is a vegetable that tastes very bitter and I hated as a kid. I never imagined me making this ever. This is a family favorite for all from my husband's family and is I have learned this from my mother in law. I dedicate this post to her. Amit bought the vegetable last week from Indian stores. Even my son ate it for lunch and says "Mom, I will be 5 years old now. I am big, I can eat hot food. So I want to eat it.' I was really surprised that Ariv ate it. All efforts rewarded :). Check out the recipe, very simple.

Ingredients:

1 small bitter gourd

6 spoons of Achar masala

6 tbsp oil

4 tbsp lemon juice

5 cloves garlic finely chopped

1 tsp cumin seeds

1 tsp mustard seeds

6 curry leaves

pinch turmeric powder

pinch Asofoeida

Salt to taste

Method:

1. Wash the bitter gourd and cut into small pieces. Remove all the seeds inside.

2. Heat oil in small pan.

3. Add cumin, mustard seeds, Asofoeida, turmeric powder, curry leaves and chopped garlic, Give it 2 minutes to get little golden brown.

4. Meanwhile add the lemon juice and achar masala to the finely cut bitter gourd pieces in a plate.

5. Now add the oil to the above mixture. You can store in container of your choice.

6. Refrigerate it so that it lasts long.

7. Serve hot with raita, curry, dal, rotis and rice.
