Basil Thai Fried Rice
I love Thai food! My in laws visiting this summer and the kids are having a blast! I made this thai dish vegetarian and chicken curry.
Ingredients:
2 cups brown rice (healthy option)
1/2 red pepper chopped
1/2 yellow pepper chopped
1/2 orange pepper chopped
1/2 cup green beans
1/2 cup peas
1/2 cup broccoli
3 cups vegetable stock
2 cups coconut milk
1 cup mushroom
1 onion
6 cloves garlic
1/2 inch ginger/ thai ginger/galangal
4 tsp soya sauce
2 tsp vinegar
4 jalepeno peppers
1/4 cup basil leaves chopped.
Method:
1. Cook the brown rice with vegetable stock and coconut water in a open pan for about 25 minutes.
2. In a wok, add 4 tbps oil. Heat
3. Add chopped onions, garlic, ginger and saute till golden brown.
4. Add all the jalepenos, red, green, orange, yellow peppers, mushrooms.
5. Saute for 2 minutes and add peas and broccoli.
6. Add soya sauce and vinegar. Keep aside
7. Heat 2 tbsp oil in wok and add basil leaves and saute the brown rice for 15 minutes mixing throughout.
8. Mix the vegetables and saute.
9. Serve hot with curry of your choice,
