Awesome vada pav


My favorite street food from college days! Remember days in my undergrad college boat club. this was my to go food when I dint like the food in the hostel mess. Vada pav and hot masala tea!

Ingredients:

4 potato

1 onio small chopped

6-7 cloves garlic

1/4 inch ginger

bunch cilantro leaves

bunch mint leaves

4 tbsp oil

2 tsp cumin seeds

2 tsp mustard seeds

asafoetida

bunch curry leves

4 thai chillies (change according to taste

2 lemons

1 tbsp sugar

salt to taste

2 cup chick pea flour

2 tbsp rice flour

Method:

1. Boil the potatoes and remove the skin

2. Mash them with masher

3. Heat oil in pan and add cumin, mustard seeds. Let the seeds sputter. Add pinch asafoetida

4. Add curry leaves, garlic and ginger crushed.

5. Add chopped cilantro and mint

6. Add the potatoes and saute. Add lemon juice, sugar and salt to taste. Let mixture cool. Then make small balls of the size you wish that would fit in a bun. Keep aside.

7. Mix the chick pea flour, rice flour with 3/4 cu[ warm water. Mix thoroughly to a smooth paste. Add water as needed.

8. Add some salt, chilly powder, for taste,

9. Heat oil in frying pan and when hot add some oil (2 tsp) to the above batter. This will allow less oil for frying.

10. Dip the potato balls in the batter to coat them and then fry the balls. It will take 2-3 minutes to fry on one side. Allow time for the coating turn golden. Be careful. Extra time or heat might make the color dark brown.

11. Serve hot stuffed in a white bun. You can add tamarind/mint/tomato/red chutney on the sides of the bun.
