Uttapam (Thick Rice - Lentil crepes)

My to go food for Kids lunchbox! Easy to make in the morning when you have the batter ready!! Ariv and Neti like to eat this once in 2-3 weeks when get bored with rotis and veggies.



Ingredients:

To n=make batter:

3 cup Rice (Laxmi brand Idli Rice)

1 cup urad dal

1 tbsp fenugreek seed powder

1 tbsp oil

Salt to taste

Method:

1. Soak rice and dal separately in water overnight or 8 hours with water covering them more than 1 inch.

2. Grind dal in vitamix in smooth paste and keep aside

3. Grind rice in vitamix in smooth paste and keep aside. You can now add rice to dal.

4. Cover the above mixture in pot covered with cling wrap. Let stay overnight or about 8 hours. The dal fluffs. Then added fenugreek seed powder to it. Add salt to taste.

5. I generally get batter in a small bowl and add cut onions, cilantro, cut chilly, ginger to it. Occasionally add cumin and mustard seeds.

6. Take oil in pan and turn on heat till pan is hot.

7. Use a spoon to make little thicker rice crepes by spreading batter on pan,

8. Wait for 2 minutes till the sides start coming off.

8. Turn the crepe side using spatula and cook for another 1 min.

9. Serve hot with small onion sambar or coconut chutney or potato vegetable.
