Carrot soup

Winter month!! A hot cup of healthy soup every night sounds soo good! I make soups almost every weeknight! With my Zumba workouts and Surya namaskars, I feel guilty eating the heavy carb Indian meal with rotis or rice so soups and protein like boiled eggs, fish or chicken is my dinner. Tomato, carrot, cauliflower, broccoli, cabbage are my all time favorites! My husband and kids also loves a bowl of this healthy soup with the regular meal of rotis, veggie and chicken, fish or eggs!

Ingredients:

4 carrot organic (From Costco)

1 medium onion

1/4 inch ginger

Alternatively add 1 tomato, or 1/2 cauliflower or 1.2 broccoli or 1/2 cup cabbage!

5 cloves garlic

2 -3 cups water depending on how you want the consistency

2 tbsp fresh ground pepper

Salt to taste

2 tbsp Amul butter (optional) enhances taste

1 tsp cilantro to garnish

Method:

1. In a pot boil water and carrots, onions, 4 cloves garlic, ginger and veggies of your choice. Boil for 15-20 minutes. Let cool down for another half an hour.

2. Take 2 tbsp Amul butter in pot and add cut 2 cloves cut garlic to it. Stir fry for few minutes till it turns transparent.

3. Grind together vegetables in vitamix till it turns smooth.

4. Add the ground soup in pot again. Add pepper, salt, butter. Let boil for 10-15 minutes.

5. Serve hot. Garnish with cilantro.
