Whole Stuffed -Fried Rainbow Trout
January snow! The backyard is covered with snow and the kids are making snowman!! I am so excited to cook the whole fish for the first time!
Ingredients:
4 Rainbow trout full and cleaned-(costco)
8 cloves garlic
1/4 inch ginger
4-5 red chillies
4 tsp turmeric powder
4 tbsp rice flour
2 tsp black pepper
4 tsp tandoori masala
cilantro leaves cut
1 lemon
Salt to taste
Stuffing:
2 tsp oil/ghee
1 tsp cumin seeds
pinch of asafoetida
2 small onions chopped
2 tsp garam masala
1/2 cup cauliflower finely grated
1/2 cup carrot finely grated
Any veggies of your choice finely grated
Salt to taste
Method:
Fried Fish:
1. Crush garlic, ginger, red chilies together in a blender.
2. Wash fish pieces throughly. Marinade with the turmeric, salt, garlic, ginger, red chillies paste. Add chilli powder, black pepper., cilantro leaves and lemon juice. Keep aside for couple hours.
3. Meanwhile, create the stuffing. In a pan, add oil, cumin, hing, onions, cilantro, masala and veggies of your choice. Saute. Let cool for 15 minutes. Add the stuffing to the fish.
4. Cover fish pieces with rice flour.
5. Grease pan with oil and turn heat to high.
6. When the pan is hot, stir fry fish pieces till they cook crisp (about 7-9 minutes)
7. Serve hot with steamed veggies, solkadhi and rice.
Its winter and snowing heavily outside. Fried fish - yumm, the family enjoyed the dish together last last weekend on a saturday lunch. I made rotis, dal, saar and rice along with it so was complete meal.
