Malai Kofta
It's Navatri 2019, the fifth day. I invited few friends and parents visiting from India. This is the first time made this dish! It is not as quick as other dishes since needs gravy preparation and making the vegetable kofta balls. This is a lovely party dish that everyone will love including the kids. My son like it so much kept asking for it the next 2 days.
Ingredients:
For the kofta balls-
5-6 Potato boiled and smashed
Alternatively, can use 2 small grated green bottle gourd
1/2 cup Paneer grated
1.5 tbsp turmeric powder
2.5 tbsp garam masala powder
Handful Cilantro leaves
5-6 tbsp corn flour
For the curry
4 cloves garlic
2 Tomato - cut pieces 1/4th inch
3 Onion - cut pieces 1/4th inch
2 bay leaves
5 peppercorns
4 cardamon
4 cinnamon
12 cashews
1/2 pint heavy whipping cream
Handful Cilantro leaves
Salt to taste
Method:
1. Make stuffing with paneer, turmeric, garam masala, cilantro, salt.
2. Now make balls of the smashed potato and put stuffing inside it.
3. Coat the balls with corn flour and deep fry on medium-high flame.
4. Meanwhile, saute garlic , onion and tomato and the dry spices till translucent.
5. Add cashews. Pour in blender and make paste.
6. Pour 2 tbsp oil in a IP in saute mode and add 2 tsp turmeric powder and the blended paste from the blender.
7. Now add heavy whipping cream. Let cook for 10 minutes,
8. In a serving dish, add the kofta and pour the gravy.
9. Garnish with cilantro
10. Serve hot with rice or rotis.
