Upama (Spicy cream of wheat recipe)
Today is Thursday evening and making snack for the kids ! Upama tastes like spicy version of grits made the Indian way! Generally served as breakfast, am feeding this to the kids as snack today. Sometimes, make this for dinner too adding vegetables to it- peas, carrots and cauliflower so that it is a complete meal!
Ingredients:
2 cup Rava. (Use Swad brand shown in the picture)
1 Onion - small fine cut
1/2 cup peas (optional)
1/4 inch grated ginger
2-4 small cut dry red chilly per taste
1/2 cup plain yogurt
1 lemon juice
2 tbsp vegetable oil
2 tsp cumin
1 tsp mustard seeds
pinch asafoetida
8-10 curry leaves
handful peanuts
2 tbsp homemade ghee
cilantro
1/2 cup peas (optional)
1/2 cup chapped carrot (optional)
1/2 cup chopped cauliflower (optional)
Shev to garnish
Salt to taste
Method:
1. In a pan, add the rava and saute for about 10 minutes on medium -low flame till golden brown.
2. In a pot, put 4 cups water to boil.
3, In another pan, heat 2 tbsp vegetable oil. When hot, add cumin, mustard seeds, asafoetida, curry leaves, red chilly and grated ginger. Saute till mustard sputters.
4. Add the onions and fry till transparent. Add peas and peanuts and rava.
5. Add salt, yogurt, lemon juice to the pan. Saute for 2-5 minutes.
6. Now turn the heat low add carefully add hot water from pot to the pan and saute for 5 minutes.
7. Add ghee. Then cover with lid for 5 minutes on low flame.Turn off heat. Let stand 10 minutes,
8. Garnish with cilantro and shev.
9. Serve hot.
