Peanut sauce (chutney)!
My father, brother, uncle, cousins all are a huge fan of peanut chutney! You can eat it with rotis or rice-lentils. Even my husband and now my son love it! My mom makes it and get it every time she visits me. We were out of this chutney now so making this with mom's recipe.
Ingredients:
1 cup peanuts (Costco salted)
3 tbsp cumin
4 tbsp dried/ desiccated coconut
2 tsp salt (to taste)
4 tsp red chilly powder (Kashmiri chili powder for color)
6 tsp oil
Method:
1. In a grinder, add coconut flakes, chilly powder, salt, cumin and grind in a course powder.
2. In a food processor, ground the peanuts in a course form using the low/off option. Add oil tsp by tsp intermittently.
3. Then add the coconut powder with spices with peanut powder and grind again. The chutney should have course consistency. Add chilly and salt as per taste.
You can eat with rotis or rice-dal and raita.
