Amrakhand (Mango yogurt dessert)

I am making different dishes and desserts for the family while everyone is home in this COVID19 - Stay at home condition. The kids are happy to be home. The kids called this Mango Ice cream. Especially, Neti loved it! Traditionally, this is made on festivals and served along with puris (deep fried wheat bread).

Ingredients:

Organic Greek Yogurt Plain (makes about 8 cups yogurt when water is removed)

3 cup Mango pulp (Desai brand from Indian stores)

2 tbsp Sugar (adjust to taste)

3-4 Cardamom

10-12 cashews

10-12 pistachios

2 tbsp Saffron

Method:

1. Use clean thin cooking towel to tie up the greek yogurt as shown for about 3-4 hours. This is done to remove excess water.

2, In a bowl, get the drained yogurt, mango pulp, sugar, cardamom powder. Whisk all together for few minutes till homogeneous which can take 5-8 minutes. Add pistachios, cashews. saffron and mix well.

3. In a decorative glass, add the amrakhand.

4. Add the crushed dry fruits to it.
