Adai (High protein & Low Carb - Lentil crepes)

A recipe for breakfast or supper which is very filing. It can be served with coconut or peanut chutney or potato vegetable or any other veggie curry of choice.



Ingredients:

1 cup Mung lentils with cover

2 tbsp yellow Mung lentils

2 tbsp urad dal

2 tbsp masoor dal

2 tbsp chana dal

2 tbsp toor dal

2 tbsp Brown rice

2 tsp fenugreek seeds

1 tbsp oil

1/2 cup onion finely chopped.

1 tbsp ginger garlic paste

1 tsp cumin seeds

Salt to taste

Method:

1. Soak all the lentils in water overnight or 8 hours with water covering them more than 1 inch.

2. Grind in vitamix in smooth paste and keep aside

3. Cover the above mixture in pot covered with cling wrap. Let stay overnight or about 8 hours. The dal fluffs. Then add salt to it.

4. Add onion, ginger garlic paste, cumin seeds to it.

5. Take oil in pan and turn on heat till pan is hot.

6. Use a spoon to make thin crepes by spreading batter on pan,

7. Wait for 2 minutes till the sides start coming off.

8. Turn the crepe side using spatula and cook for another 1 min.

9. Serve hot with coconut chutney or vegetable curry.
