Chicken Lollipop! (Indo - chinese)


It is a beautiful Saturday !!! Such lovely pleasant weather! Spring is here!!! A day of gardening in the backyard and planting apple, cherry and peach trees in backyard. Our vegetable garden that we were working on is now ready. Couple weeks well spent planting onions, carrots, cabbage, cauliflower. Today, I made 4 pots with mustard, chia, cilantro, fenugreek seeds. So excited about this!!! The kids are excited too! The plan to cook some of my favorites! The blog is dedicated to my husband since he helped with the cleaning and making the chicken!


Ingredients:

2 lbs chicken drummettes

1 egg white

1/2 cup corn flour

4-5 cloves garlic

1/8 inch organic ginger

2 tbsp olive oil/ peanut oil tastes better

4 tbsp soya sauce

1.5 tbsp tomato ketchup

2 tsp red chilly color powder

1 tsp vinegar

1 tsp red food color

handful chopped spring onions

Salt to taste

Method:

1. Clean the chicken drumettes and make lollipop size pieces. This is the most difficult step of the process. You will need a sharp meat knife to scrape the chicken off the bone and make it look like a lollipop.

2. Marinate the chicken in soya sauce, tomato ketchup, vinegar, garlic, ginger crushed, red chilly powder for at least half hour.

3. Get 1 egg, corn flour, red chilli powder, salt in a bowl.

4. Dip the chicken pieces in the egg - corn flour mixture.

5. Deep fry the chicken pieces and let turn golden brown.

6. Meanwhile, create paste of garlic, red chilly powder, red color(optional).

7. In a wok, heat 2 tbsp oil, add above paste. Add chicken pieces and stir fry.

8. Garnish with spring onions.

Serve as an appetizer or side dish!
