Samosa

My favorite street food from college days! Remember days in my undergrad college boat club. this was one of my favorite foods. Samosa and hot masala tea or coffee!!

Ingredients:

4 potato

1 onion small chopped

1/2 cup peas

6-7 cloves garlic

1/4 inch ginger

bunch cilantro leaves

2 tsp garam masala

4 tbsp oil

2 tsp cumin seeds

2 tsp mustard seeds

1 tsp sauff

asafoetida

bunch curry leaves

4 thai chillies (change according to taste)

2 lemons

1 tbsp sugar

salt to taste

2 cup All purpose flour (Maida)

2 tbsp butter

2 tsp Ajwain seeds

Oil

Method:

1. Boil the potatoes and remove the skin

2. Mash them with masher

3. Heat oil in pan and add cumin, mustard, sauff seeds. Let the seeds sputter. Add pinch asafoetida

4. Add curry leaves, garlic and ginger crushed.

5. Add chopped cilantro and chopped cashews and boiled peas.

6. Add the potatoes and saute. Add lemon juice, sugar and salt to taste and garam masala. Let mixture cool. Then make small balls of the size you wish that would fit in a samosa. Keep aside.

7. In a bowl, mix the all purpose flour, 3/4 cup warm water, ajwain and butter. Knead thoroughly to a dough ball that does not stick to your hand. Add some salt for taste,

8. Heat oil in frying pan and when hot add some oil (2 tsp) to the above dough. This will allow less oil for frying.

9. Use a laddle to roll small dough balls in circular format. cut in 2 pieces. Use a semicircle and stuff in the potato filling. Use water to close the edges.

10. Then fry the samosas on medium falme. It will take 1-2 minutes to fry on one side. Allow time for the coating turn golden. Be careful. Extra time or heat might make the color dark brown.

11. Serve hot with tamarind/mint/tomato/red chutney.

Enjoy with hot tea or coffee!
