Spicy Eggplant snack/appetizer


The plan was to make eggplant fritters that are pan fried and served as a side dish along with veggies, lentils and whole wheat flatbread. An idea to make this with less oil is to bake in oven sprinkling with oil spray.

Ingredients:

1 Large Eggplant

1 tbsp oil

2 tsp turmeric powder

2 tsp Kashmiri red chilly powder

2 tsp onion powder

2 tsp garlic powder

2 tsp Amchur powder

2 tsp black pepper

2 tsp cumin powder

2 tsp cilantro powder

2 tsp black salt

Salt to taste

PAM spray

Method:

1. In a colander wash and clean the sliced eggplant,.

2. In a baking dish, add all above ingredients and toss. Spray with PAM.

3. Preheat Oven to 400 F and place the baking dish in.

4. After 15 minutes, open oven and turn over eggplant slices. Total time, bake for 30 minutes. Let stand for 10 minutes.

Serve hot as appetizer or as a side dish with your Indian meal. Enjoy!
